Meatball Soup
The Meatballs
1 lb ground beef
1 egg
3 cloves garlic, chopped
1/4 medium onion, chopped
1/8 cup grated parmesan cheese
1/2 tspn fennel seed
1/4 tspn basil
1/4 tspn oregano
1/2 cup seasoned Italian breadcrumbs
1/4 cup pasta sauce (Hunt's garlic and herb (my favorite))
4 tblspn extra virgin olive oil

Mix all ingredients (except olive oil)
in a mixing bowl until well blended.
Add additional bread crumbs as necessary until
mixture is fairly dry.
Roll mixture into one inch balls. Brown (15 minutes) in extra
virgin olive oil.
Set aside

2 cups water
2 teaspoons beef bouillon
1 16oz can Italian stewed tomatoes
1 medium onion chopped
1 green bell pepper chopped
1/2 cup sliced carrot
1/4 lb small pasta (bowties or small shells (precooked))
1 link hot Italian sausage, casing removed, crumbled, precooked
1/4 teaspoon celery seed
1 tblspn dried basil
1 tblspn dried parsley
2 cloves garlic, chopped |
Preparation
Add all ingredients, except pasta, to a medium pot.
Bring to a boil and simmer for 30 minutes.
Add pasta and simmer for 15 minutes.
Serve with a garnish of greated parmesan cheese.
