Sausage & Clam sauce
4 links hot Italian sausage, sliced
1/2 lb baby clams
1 jar Clam Juice
1 16 oz Hunts Pasta Sauce (triditional)
1 can tomatoe paste
1 med onion sliced
1 small green pepper chopped
4 cloves garlic chopped
1/4 tspn pepper
2 tblspn olive oil (extra virgin)
1 tspn fennel seed
In a medium sauce pan bring olive oil up to heat, add garlic. Sauté garlic 2 minutes, add sausage. Sauté 5 minutes. Add onion and green pepper, sauté 10 minutes. Drain excess fat. Add clam juice, pasta sauce and tomato paste. Heat and then reduce heat, simmer 30 minutes.
While sauce is cooking: In a steamer, add fennel seed to the water. Steam washed clams until they open. Discard any clams that do not open. Add clams to the sauce and simmer 10 minutes. (Clams can be added with or without the shell)
Serve over your favorite pasta.
