Chili

1 lb ground beef
2 tspn chili power
1 15-16 oz. can kidney beans, drained (reserve liquid)
1 15-16 oz can stewed tomatoes
1 med onion chopped
1 small green pepper chopped
To suit taste, chopped Jalapeno pepper
2 cloves garlic chopped
1/4 tspn ginger
1/4 tspn nutmeg
1/2 tspn mustard powder
1/4 tsbn pepper
2 tblspn olive oil (extra virgin)
Brown beef in 3 quart saucepan in olive oil then add other ingredients and mix well. Cover and bring to a boil. Reduce heat and simmer 45-50 minutes, adding reserved bean liquid to suit.






Stewed Tomatoes
canning recipe (4 pints)

2 Qts tomatoes (scalded, peeled and cut into chunks)
4 tblspns Green peppers (chopped)
4 tblspns Onion (chopped)
6 tblspns Celery (chopped)
2 tspns celery salt
2 tspns sugar
1/4 tspn salt


Mix all ingredients & pack into clean jars to within 1/2 inch of top. Process in water bath for 45 minutes.
